A new FCC filing for a future Starship flight (possibly IFT-3) suggests Starlink communication even through Starship entry.
"SpaceX intends to demonstrate high-data-rate communications with the Starship spacecraft and the Super Heavy booster on the ground at the launch site in Starbase, TX, during launch, in-flight operations, booster recovery, and spacecraft entry."
The filing also points out that during this particular Starship flight, after apogee it will conduct a powered landing in the Indian Ocean
