You should realise that the cvxFXS/FXS pool is tiny on Curve. It holds a mere 4.4 mio USD. If you were to buy cvxFXS for 200k USD value in FXS, you would have a 11% price impact. It's just not a very deep liquidity pool...

No. There is no such thing as a peg when these type of securities involved. Its protocols attempt, but have not seen any successful peg. Stable peg is something way different
