MORE INFO ON THE ONIONS: 

They are quite freeze tolerant.  Lower teens will challenge them but will still survive well with some of the greens getting frost bitten.  A simple covering will suffice for them those few times the temps might get that low.  Otherwise, they perform splendidly throughout the winter up till June.

Best time to plant is from late August to late October, earlier you plant, the sooner you’re eating.  12-18" is good spacing. Some will start bolting as early as April.  Just break the bolts off.  They tend to be a bit on the woody side but could still be used in soups or other such dishes.  I just compost mine.  Usually by late May they begin to start aging, stop growing, and die back.  Time to get them out of the ground.  They bulb up like garlic so break them apart and let them dry in some shade somewhere.  Put them in the ground again come late summer/early fall and you start the cycle all over again.

You’ll notice they “multiply”, hence their name, and you’ll have way more than you need each subsequent year.  You could use the actual onion bulbs as onions.  I don’t only because I’m lazy, they’re small compared to regular onions, and I get my fill on the greens.  If you can catch when they start dying back and harvest them all, you can chop the greens into small pieces and freeze them.  You may have plenty for months to tide you over till you’re harvesting the next year’s batch.  It’s a perfect system for both the novice and the experienced gardener.
