Best noodles from H Mart?
Hello! I love making ramen from scratch, but I don't do homemade noodles. I always get my bones for my broth from H Mart, and I'm sure I could also get some great noodles there as well. However, I have absolutely no idea what I'm looking for, and none of the noodles say "ramen" on them.
Can I get some recommendations on brands or what to look for? I assume fresh noodles from the refrigerator section would be better than dried noodles, but again, I honestly have no idea what the heck I'm looking for. Please help!

The transformation of dough into a sheet. How to manage without legs?
Can't understand how low-hydration dough balls in Japanese machines turn into a sheet. Tried replicating the process on electric machines, but no success. What could be the issue?

Best Ramen in NYC?
So far my favorite spot is Ramen Takumi, by Union Square. The Kyuu Ramen near there is also decent, but I prefer Takumi's broth. Ajisen Ramen in Chinatown is okay, but more out of the way for what it's worth imo.
I didn't care for Ichiiran (overpriced) or Teppen Ramen (underwhelming).
Are there any spots in NYC that I need to check out?

Instant ramen recommendations for someone who can’t have spicy foods
Hi everyone, I have an amazing asian market in my city and I’d love to try out some higher-quality instant ramens.
However, I get really scared of trying random ones since a lot of (if not most of) them are spicy. I can’t stand spicy foods, I start crying, my nose runs and I almost choke.. not very fun. I can’t count the times I was betrayed by menus and waiters that claimed some dish was “mild”.
Would anyone have any recommendations for me? I’m okay with either bowl or packet formats. I have a preference towards veggie, chicken or mushroom broths… but I’m willing to try something new!

How to premake dry ramen
I'm gluten-free and have a bunch of intolerances and a reintroduction diet, for health reasons. I've been thinking about the idea of making my own dry ramen to take with me, especially in places where I won't be able to use a fridge.
I know I can get dry gluten-free noodle 'cakes' in a portion, but does anyone have advice for transporting the dry bits, or where I should source them? Thank you!

Cow Trotters for broth?
Hello! I was planning on making tonkotsu ramen and I was going to use pork trotters but I mistakenly bought cow’s instead.
Does anyone know if I can just use it or should I use something else? I’m unsure whether I can find pig trotters near me (I bought the cow trotters from an Asian store almost 3 hrs away from me), so what’s a better alternative?

hey all,
Are there certain ones i should look out for which are generally available most places? (Shinramyan, any indomie instant noodles, etc aside). Recommendations? (anyone else feel Taiwanese ones are actually pretty good ?) Are the pricey Japanese ones in general worth trying?
