Q- Neoguri change from ~25y ago?
Hi!
Q- I've been eating Neoguri regularly (~3x a year) my entire life. Can anyone validate it changing within the past 10-15y? I really think it tastes not nearly as delicious as I remember. Now I think it's much more spicy and less flavorful, like "empty". Has anyone noticed this? I've been preparing/eating it e the same way this entire time.

Has anyone ever tried making dashi by letting the ingredients steep overnight?
I'm curious because I watched a video of a chef making a fish broth (not exactly dashi), and without further explanation, he mentioned letting the broth steep in the fridge overnight. I wanted to try it with a type of Ara Dashi (with fishbones), but I'm wondering if it might bring out too much bitterness.
