Pickled Shiitaki Shrooms
First time poster!
I followed a recipe outlined in "Let's Make Ramen!", the cookbook, for pickled shiitaki mushrooms.
The recipe states that they can last in an airtight container in the fridge for up to a week--but I ended up with so many mushrooms that I won't be able to eat them in a week.
I was wondering what the best way to keep them is--Can I freeze them in their brine in smaller portions? Can I just leave them no problem in their brine as long as theyre fully covered?
