Ramen in Köln
my partner and I are going to Köln/Cologne mid-december but are there any good ramen we could visit? Excluding Takumi since I work at one already but I'm trying to search somewhere out there that maybe the internet doesn't show? It's been too long I've had a good bowl of ramen thank you.

Two Questions for yall!
1st Question:
I always see these videos of people cooking these frozen ramen kits where essentially a restaurant or shop will freeze the broth, noodles, and toppings into a puck.
Are they available in the US at all or no? I’ve only seen them in Canadian or Euro content creator videos.
2nd Question:
Has anyone tried Joshua Weissmans Fast Tonkotsu Broth recipe? It’s the one where he does it in an Instant Pot and adds gelatin sheets. I’m considering trying it but wanted to hear if anyone had feedback.

Tip on stock making temp control.
Making stock for me is tedious because I have to get up and monitor the temperature and I get distracted all day thinking if its too hot or too cold.
Then i realize, my husband has a wireless thermostat for smoking meat.... so i stuck that in the pot and monitored the temp from my desk instead of getting up every 15 mins to stick a meat thermometer in.

Has anyone made their own dried topping mix?
I’m a diy type cook and I’d love to make my own topping mixes rather than buy them. I have a dehydrator but not a freeze dryer. Has anyone else tried this? What did you add?
