I’m craving Tonkotsu
I visited Japan earlier this year and had my first experience of Tonkotsu Ramen. It was the most savory rich and flavorful broth I’ve ever had in my life. Coming back to the US I’ve not been able to find any brands at the supermarket that has helped me re-create that taste.
What brands do you use to make a delicious Tonkotsu broth?

How much is to much?
I go to a ramen restaurant here in the Bay Area that makes this tonkotsu broth that is killer. Is it bad that I eat here twice a week for lunch?

Penghui powder
Hi I am from europe and for some time i have been trying to create alkaline noodles. There are tons of recipes that use some kind of easy to find at local grocery shop ingredients but the original ones always mention using penghui powder. I know i can get it from the internet chineese stores but why are they not available here in the west? Is it banned due to health issues? If yes I can not find any article that would say that this powder i indeed harmful. Why is it such a hard thing to get?

What do I need to make homemade ramen - kitchen equipment
Hey everyone! I am in the process of moving into a new apartment and I decided I wanted to have a solid ramen setup. I have always wanted to do it but realized I didn't have everything I needed.
