Bamboo shoots?
Hi!! Anyone know what type of ramen commonly has those tender juicy strips of bamboo? Does the bamboo have a specific name? I live in the US and I want to eat more bamboo because all of the times I’ve had it, they were so yummy. Thank you <3

Best ratio of noodles and broth?
Hi everyone.
I'm new to ramen and trying out a lot at home right now.
Which ratio of noodles and broth you guys would recommend? Which ratio is the best?
I've tried...
- 300ml + 150g = to much noodles
- 300ml + 130g = better but still a bit to much of noodles
Or shall I put in more than 300ml broth? Would need a bigger bowl.

Do you salt your ramen water
Just wondering if you salt your noodle water before cooking the noodles. I feel like if yes, the noodles will be too hydrated, and won’t absorb the broth as much. I mostly use sun noodles for my ramens. If yes, have you noticed a difference??

I usually put boiled eggs in my ramen, but I'm out of eggs other than my jar of red beet pickled eggs that I've made a few days ago. I was wondering if anyone has tried red beet pickled eggs in Ramen, and is it good? I just don't want to ruin my ramen.

Ive tasted the broth after 3 and a half hours and it tastes diluted. Is this just because of me topping up the broth or is it because its just not been in for long enough?

Good recipe to start?
I've been wanting to make ramen from scratch for a while now. And there are tons of recipes on the internet that are not all equal. I understand the basics of what's needed (soup, dashi, etc) from the book of ramen but I want a good chicken recipe I can follow step by step that is authentic and good quality. Any suggestions?
