Looking for Ramen restaurant recommendations in Tokyo/Osaka

Keyaki miso ramen from Sapporo. Rated really highly on tabelog, but there is a 40 minute wait. I'm not sure if I would wait again. Noodles were nice and chewy, but the soup was a bit too hot for a summer day. They also had no chashu

Tokyo Ramen Reccs!! (Help)
Going to Tokyo at the end of year and I want to eat some yummy ramen!!
I want to try Jiro ramen and House style ramen but I don't know of any specific shops. Also how much will I suffer as a female tourist who barely speaks japanese in a jiro ramen shop lol
If it helps, I like chewy/thick/firmer noodles!! And budget per bowl... Around 1500 yen (without add ons) 🤔

Scaling ramen production
Hey,
I just started a ramen shop after working in kitchens for about 10 years. I’ts been an abolute blast and an amazing success. The problem is that im making my noodles by hand and due too the high volume i’m losing a lot of time just making enough noodles. Does anyone have any suggestions or machines on streamlining this process? Ive tried an extruder machine but the texture gets all fucked without the lamination and i currently dont have the budget to buy a yamato automatic ramen machine.
