Duck ramen help
Hi everyone,
Next week, I will be making duck ramen.
I can get whole frozen ducks at my asian grocery store, so I was planning on using 2 or 3 depending on the price.
I will cut off the breasts and make chashu with, and use the rest for the broth.
They also sell duck feet and I was wondering if they can be used instead of chicken feet to add gelatin? Would that be a good idea or not?
I am still not sure what tare to make and would not mind some festive topping ideas, so feel free to leave suggestions.

Options for Noodle Cutters
I currently have a KitchenAid with various pasta attachments and a Marcato Atlas 150 with various noodle attachments.
None of them seem to offer anything in smaller increments. I'd love to have 1.1 mm, 1.15 mm, 1.25 mm, 1.4 mm and 1.7 mm cutters.
Are there any ways to get custom cutters made that are compatible with either the KitchenAid mixers or Marcato Atlas 150 pasta machines? If there are, does anyone have a lead I could contact.
If not, does anyone have alternative suggestions? Is getting a larger machine my only options at this point? I have found alternatives on chinese websites that allow me to order whatever cutter I'd like, if I make the switch I am looking at spending another $1,000 minimum.
For now this is simply a hobby and I am not making noodles commercially so if possible would love to not have to spend that amount of money on a new machine.
Attachments I currently have:
\- 1 mm vermicelli round cutter (Atlas 150)
\- 1.6 mm taglioni square cutter (Atlas 150)
\- 2 mm spaghetti cutter (KitchenAid)
\- 3 mm linguine cutter (Atlas 150)

TLDR: anyway to get custom cutters for the KitchenAid mixers or Atlas 150? If not what options do I have to get more optionality in cutter size?

I might be addicted to Samyang Buldak Ramens.
Hey everyone!
I think I got addicted to samyang buldak ramens.
A few months ago I tried it for the first time I LOVED IT and since then I can't stop. I buy one almost every week and if I don't, I think about it a lot.
I don't know if it's just because I love spicy foods, noodles, uniqe spices and asian foods and I can have all of that in 5 minutes, also like I said I only know about this for like 3 months so it is definitely new for me. So maybe I just really like it?
OR is it because it has additives that can cause addiction.
I am concerned because it's an instant food probably with a lot of things in it that are bad for me if I eat it regurarly. (Right?)
I don't know if this matters but this is about especially the Carbonara one cuz that's my favourite so far but I want to try all the flavours.
Does anyone know about this or have/had the same experience?
( I think I'm not that kind of person who can be addicted to things so simply tho and I never had an addiction to anything even tho I tried a lot of things relatively)

Im autistic and my favorite food was maruchans chicken tortilla flavor, but ever since it was discontinued i haven't been able to eat any other instant ramens, which sucks because they're super convenient when i dont feel like cooking anything. ive tried so many other instant ramens (even just the normal chicken one) but none of them are close enough :( if anyone has suggestions they'd be much appreciated

Classic ramen recipe recommendations for a college budget?
Currently very colleged, very poor, and I'm wanting good tasting food that won't kill my wallet and everything I hold dear.
I really love ramen, but I have no idea how to make it my own. I see everyone making their own fancy types of ramen and they all look delicious, but right now I'm looking for classic, or close to classic, recipes that will leave me filled and cover a few different food groups at a cheap price.
