i came up with a really amazing ramen dish but could use help perfecting it
I kind of just threw it together with some left over ingredients I had laying around and I'm really happy with the dish. But I would like to know the exact measurements i should use & if I should add any spices or anything to add to it.
Recipe : creamy chicken ramen || pesto in a jar || spoon full of butter || some milk || Virgin olive oil || & mozzarella cheese
I think it came out really good, but I'm not sure what I should add to improve it.

Tonkotsu emulsification is not holding
Hi, I was wondering if anyone can offer advice about this. I do a large batch of tonkotsu broth (10qts) using a pressure cooker. I use mostly back bones with some fatback added as well. After pressure cooking finishes, i boil everything for a bit, strain, then use an immersion blender to turn it into a silky, milky white broth. It is pefect.
I hold it very hot (200F) for the whole evening whe i am serving it, and about an hour into serving, the emulsion starts to break and by the end it is no longer white or silky. Does anyone have any idea why the emulsion wouls not hold for longer than an hour? What could be the issue?

What is a good ramen?..really.
The real question is, who gets to decide? Who can we trust as a reliable source of ramen information? And who should be the judge?
In this wonderful community, I hope to connect with people who have grown up or are currently living in the cultures where ramen originates. It would be amazing if they could share their valuable insights and knowledge with us. Unfortunately, we can't always verify the authenticity of information here, which can be disheartening.
It truly saddens me to witness dishes that have taken centuries to perfect immigrate to the West, only to be altered in one way or another to suit the local palate. Often, the individuals making these changes aren't fully aware of the flavors that resonate with Westerners. They tend to rely on what is served in fast food chains, assuming that's what all people want their food to taste like.
As a result, the essence of these ethnic dishes is lost for those who know how they should truly taste. At the same time, they may not quite hit the mark with what the locals actually enjoy.
With respect and love to all, I kindly request that if you're not Arab, please refrain from attempting to make Arabic food for me. And if your experience with ramen is limited to a single drunken dare, please don't try to convince me that Shin ramen is the best Japanese ramen. Similarly, if you've never finished a full 3X spicy Buldak, it's best not to rank the product on YouTube. Lastly, if you can't read the cooking instructions on the package without the help of Google Translate, please don't tell me how I should cook my ramen next time.
If you're Japanese or Korean, I would absolutely love to hear from you about which brands of instant ramen remind you of home or bring you comfort. Additionally, I'm curious to know what you like to add to your ramen to make it complete.
