Can I reduce broth to be just added to boiling water ?
I'm thinking of making ramen at work. Or more specifically, prepare everything at home and then assemble in the best way at work for me and a few coworkers.
Mainly have access to instant boiling water and microwave.
I'm thinking of using the boiling water mainly.
So I would reduce my stock as much as possible at home, so that I can just bring it to work, pour a bit in the bowl and add boiling water to get back to temp and right concentration. Would that work ?
Is there any qualityish ramen noodles that could also be cooked with boiling water that is not on a stove ?

Ramen Gift Basket Birthday Gift!!
Hello everyone!
My friend is from Singapore and for her birthday I want to make her a ramen gift basket where I will buy the ingredients for ramen noodles. I’m going to try and get authentic ingredients from an Asian Super Market near me. Do you guys have any recommendations for what I should buy? Also I don’t know anything about ramen or if it varies from country to country but recommendations specific to Singapore would be best! Also what brand of noodles should I buy! THANKS IN ADVANCE!

Help with meat selection (Tonkotsu)
Hi everyone! I've been researching for a week and I read some of Ramen Lord's cookbook and I'm having trouble figuring out the meat situation. I'm not well versed in meat cuts/fat content, etc.
Ideal ingredients for Tonkotsu? Neck, Femur and Belly?
What can be subbed for what if ingredients cannot be found? Neck for Shoulder? Femur for Hock, Pigs feet or chicken feet? What substitution should be avoided and what steps need to be taken if you do substitute?

Pork emergency! How to use loin!
You all helped me a great deal in picking out an appetizer for my fancy anniversary dinner this weekend! I'm hoping for your advice again since I've hit a bit of a snag...
I had planned out my ramen from broth to toppings, and drove over an hour away to our 'big' grocery store today to get supplies. I live in rural Canada so our pickings are slim.
I was planning to make chashu pork- but after going to FIVE different stores and asking various butchers, I could not find pork belly anywhere. I used to find it at my usual store but they said they cut it into bacon now, and don't do custom cuts anymore...
I was only able to find pork loin centre roast, which has already been tied with twine. There's a thin layer of fat around the outside of it, but it's not nearly as thick as pork belly.
I'm worried that this will dry out if I cook it the same way as rolled pork belly. Have any of you used pork loin centre roast successfully? Will leaving it in the fridge with its braising liquid help? Should I alter cook times or cook it differently all together?
I've been planning this meal for weeks and I want it to be as perfect as it can be- I'd really appreciate the help!
