I’ve got this idea, as an italian-American, to make popular Italian soups in the style of ramen.
My initial thoughts are to attempt a ramen version of Pasta Fagioli or Italian Wedding soup. Replacing the pasta with ramen noodles and giving them a more ramen-like presentation.

Ramen soup base, when does it expire after opening?
I recently found this in the supermarket and because I like ramen I had to get it. Today I made myself a bowl of ramen and I really liked the taste, not exactly the same as the ones I had in Japan but that's ok. Anyway it doesn't say on the bottle how long I can use it after opening, only a best before date and that's it. Does anyone know? A month? 2 months? Longer? I did put it in the fridge after opening.
