Visited Fukuoka for 2 weeks and Had some Ramen

Hakataya Kawabata
Probably the cheapest ramen in whole of Japan for just Y290 w/o any additional stuff like the tamago and additional pork (Y150 ea) and on its own, IMHO its already a complete bowl. The broth is flavorful light and not overwhelming, you can choose the texture of your noodles from regular, hard, and hardest and I often selected the hard one.

Same ramen but chose to have sprouts this time and added a bit more pepper for the kick. From my observation, locals love to put a lot of sesame seeds and some beni shoga (red pickled ginger) on their Hakata style ramen.
If it will be your first time to have local Hakata style ramen, IMHO Hakataya Kawabata is a really really safe choice.

Shin Shin
Probably the best bowl of ramen I ever had during my stay was at Shin Shin with their most basic ramen (as recommended by their nice waitress). Found the place by chance when I got lost going back to my hostel, and I wasn't even planning on having an early dinner, saw a long line and as a foodie when you know that there is a long line, its either:
Hype
Or just really really good food
The broth was a bit more thicker but not overpowering, you can definitely taste the bones in the stock they used. Left the place with a clean bowl of ramen and a clean plate of gyoza.

I really wanted to try to eat at one of the many Yatais in the area and try the "fried" ramen, IMHO its okay. But the surprise was it was the daikon in the oden that I liked the most.

Ganso Ramen Nagahamake
Located just in front of Hakataya Kawabata which is also near my hostel, locals also line up to this place. What sets them apart is that their broth has a heavy spring onion and pepper taste that gives it a "fresh" taste.

Koharu Udon
Not ramen but something notable. When I visited Yufuin, had a quick lunch at this family restaurant. Had the udon and tonkotsu set meal and it was delicious.

Rai Fuku Ken
Went on a day trip to Kurume and had their Kurume style ramen. This one is really fatty and had an intense gamey flavor. Delicious. Another observation, locals tend to order a side of chahan instead of gyoza to pair with their ramen.
I avoided Ichiran as it seemed to mainstream and there are usually long lines from tourists, wanted to explore more of where the locals eat. There are still a ton of places I wanted to try, but my stomach can only handle so much food and there more to just than ramen when I visited.

Bonus: Hakata Motsunabe Maedaya
One of the best things I had in Fukuoka, and was worth the 1 1/2hr wait time, in 12c weather. Price is reasonable as this will easily feed 2 people, and you can order extra rice, noodles, or toppings that you want. Since I was alone, I just had this by itself and a cold mug of beer.

Unpopular opinion: the carbonara Buldak noodles/ cheesy ramen isn’t good
I haven’t seen anyone say this online (but one of my friends has) the carbonara Buldak noodles are really not good (for me personally). Don’t get me wrong, I love the spicy sauce that it comes with, but omg the powdered cheese is actually horrendous. I know a lot of people like it so eat what you want and I hope you enjoy it, but I have tried it multiple times with the powdered cheese and even just normal mozzarella and it’s not good.
Sorry if this post comes across rude, I didn’t mean it to be, has anyone got any other cheese recs for ramen? I know some people use milk with their ramen so I’ll try that and report back!
