how long can you keep marinated eggs unrefrigerated?

Indomie seasoning
I opened my indomie seasoning (powder) and it was all clumped together, there were also weird small clear solid balls in it. It looked like sand but clear. Ate it cause I had nothing else at home but idk it was weird should i be worried

Help with ramen ideas
I got some thinly sliced beef to add to ramen, problem is I’m struggling to think of what broth would go best with them. I’m struggling to find some beef broth recipes as I’ve learnt it’s not that common to make beef ramen. Any ideas?

Shin Ramen Style Noodles
I’ve started making my own Miso using Joshua Weismann’s spicy miso recipe. I love it, but I haven’t found any noodles I like as much as I like the noodles from Shin Ramen. They have the texture and thickness I’m looking for. I feel wasteful opening the packs just to toss the flavor packets away and boil the noodles. Anyone know where to find just the Shin Ramen noodles plain in bulk or something similar? Before anyone recommends making my own noodles from scratch, I have 3 young kids and am doing well enough to make the broth. I don’t really have the time/energy for noodles too. TIA.

Does Mecha Noodle in the north east make their own noodles?
I go very frequently and it is kind of far from me. I want to try and make my own ramen. I have successfully made my own tori paitan broth that I am happy with but am missing the noodle quality. If I can buy frozen ones that are similar that would be great! But I will make it myself too if needed.

For me ramen is just a beginning, a place to start. I keep experimenting.
A staple in my diet is ramen with shrimp. However, early on I decided shrimp flavored ramen was pretty bland so I mostly use chicken flavored as a base. I'm going to retry shrimp flavored using shrimp stock following this tip from America's Test Kitchen.
