Beet, Apple and Ginger Juice
A juice consisting of beet, carrot, apple, ginger, and lemon, blended to perfection.
Ingredients
• 2 (240 g) medium beets, peeled, halved
• 2 cups (480 ml) cold water
• 2 (140 g) large carrots, end trimmed
• 2 (300 g) medium apples, cored, halved
• 1 piece (10 g) fresh ginger root, ½" slice
• 1 slice (30 g) lemon, ½"
• 2 cups (260 g) ice cubes
Directions
1 Place all ingredients into the Vitamix container in the order listed and secure the lid.
2 Start the blender on its lowest speed, then quickly increase to its highest speed.
3 Blend for 45 seconds, using the tamper to press ingredients toward the blades.

Ingredients
1 cup (240 ml) water
2 lemons, peeled or 1 cup lemon juice
1 cup (240 ml) extra virgin olive oil
4 small garlic cloves, peeled
2 (40 g) shallot, peeled
1⅓ Tablespoon Dijon-style mustard
¼ cup (12 g) fresh chives
¼ cup (42 g) chia seeds
Directions
With a peeler or paring knife, remove the peel and white pith from the lemon, leaving just the flesh. Place all ingredients into the Vitamix container in the order listed and secure the lid.
Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 30 seconds.
Notes
Refrigerate in an airtight container for up to 1 week. Shake well before using

2 cups shelled edamame
1/3 cup tahini (sesame seed paste)
1/3 cup lemon juice
2 tbsp extra virgin olive oil
1 clove minced garlic
1 tbsp Organic Kale Powder
½ tsp salt
¼ tsp black pepper
Water as necessary
Add all ingredients to a food processor and blend until smooth. Add water to reach desired consistency. Use as a dip with chopped vegetables or as a spread on a sandwich or wrap.
