Sunshine Smoothie
Carrots and lemon are complimented by sweet oranges to make a healthy juice-style smoothie.

Ingredients

• 3 cups (720 ml) water
• 4 (500 g) medium oranges, peeled, halved
• 6 (400 g) medium carrots
• 2 slices (20 g) lemon, ¼"
• 2 cups (260 g) ice cubes

Directions
1 Place all ingredients into the Vitamix container in the order listed and secure the lid.
2 Start the blender on its lowest speed, and quickly increase to its highest speed. Blend for 50 seconds.

Notes
Instead of ice cubes try frozen mango or pineapple to boost the nutrition and flavor. Maybe try a little fresh ginger or turmeric to give this smoothie a refreshing spice.

Edamame Kale Hummus

2 cups shelled edamame
1/3 cup tahini (sesame seed paste)
1/3 cup lemon juice
2 tbsp extra virgin olive oil
1 clove minced garlic
1 tbsp Organic Kale Powder
½ tsp salt
¼ tsp black pepper
Water as necessary
Add all ingredients to a food processor and blend until smooth. Add water to reach desired consistency. Use as a dip with chopped vegetables or as a spread on a sandwich or wrap.

Cashew Energy Balls


Ingredients

¼ cup (60 ml) honey
1 cup (240 ml) cashew butter
1 teaspoon vanilla extract
½ teaspoon salt, optional
½ teaspoon ground cinnamon
½ cup (45 g) shredded coconut
¼ cup (40 g) raisins
¾ cup (75 g) rolled oats

Directions

Place honey, cashew butter, vanilla, salt and cinnamon into the Vitamix container in the order listed and secure the lid.
Start the blender on its lowest speed and increase to Variable 4. Blend for 30 seconds or until combined.
Add the coconut, raisins and rolled oats to the container and secure the lid.
Select Variable 10. Pulse 15-20 times to combine, scraping down the sides periodically, until mixture is combined. Scoop into 16 portions and then roll into balls. Dip into coconut and chill until ready to eat.

A juice consisting of beet, carrot, apple, ginger, and lemon, blended to perfection.

Ingredients
• 2 (240 g) medium beets, peeled, halved
• 2 cups (480 ml) cold water
• 2 (140 g) large carrots, end trimmed
• 2 (300 g) medium apples, cored, halved
• 1 piece (10 g) fresh ginger root, ½" slice
• 1 slice (30 g) lemon, ½"
• 2 cups (260 g) ice cubes

Directions
1 Place all ingredients into the Vitamix container in the order listed and secure the lid.
2 Start the blender on its lowest speed, then quickly increase to its highest speed.
3 Blend for 45 seconds, using the tamper to press ingredients toward the blades.
Notes

Lemon 🍋 and Chia Dressing

Ingredients

1 cup (240 ml) water
2 lemons, peeled or 1 cup lemon juice
1 cup (240 ml) extra virgin olive oil
4 small garlic cloves, peeled
2 (40 g) shallot, peeled
1⅓ Tablespoon Dijon-style mustard
¼ cup (12 g) fresh chives
¼ cup (42 g) chia seeds

Directions

With a peeler or paring knife, remove the peel and white pith from the lemon, leaving just the flesh. Place all ingredients into the Vitamix container in the order listed and secure the lid.
Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 30 seconds.

Notes
Refrigerate in an airtight container for up to 1 week. Shake well before using
