Beet, Apple and Ginger Juice
A juice consisting of beet, carrot, apple, ginger, and lemon, blended to perfection.

Ingredients
• 2 (240 g) medium beets, peeled, halved
• 2 cups (480 ml) cold water
• 2 (140 g) large carrots, end trimmed
• 2 (300 g) medium apples, cored, halved
• 1 piece (10 g) fresh ginger root, ½" slice
• 1 slice (30 g) lemon, ½"
• 2 cups (260 g) ice cubes

Directions
1 Place all ingredients into the Vitamix container in the order listed and secure the lid.
2 Start the blender on its lowest speed, then quickly increase to its highest speed.
3 Blend for 45 seconds, using the tamper to press ingredients toward the blades.
Notes
This delicious juice makes it easy for you to get an extra boost of fiber and antioxidants in your everyday diet. Try adding raw chia or flax seeds for extra protein.

What do you mean by plant-based being a controversial concept? Could you expand on that a little?

Toshio Tanahashi:
It’s controversial because it’s a concept that sees plants as just-food. Rather than seeing it as something that deserves respect. If you go back thousands of years ago, people were plant-based and no one would be surprised about that. “Plant-based” as a modern trend may be about health and diets. But for me, it’s about respect for nature. Throwing around the label “plant-based” is to me, unnatural and too much, overexaggerated. Even the dust doesn’t feel our respect towards plants. Using “plant-based” has become a business strategy. Plant-based should be obvious and talking about it too much can sound overdone. It is the reality that without plants, us animals cannot survive.

100 (+4) days of celery juice! I’ve had celery juice every single day, even if it was in the evening after running out of celery for my morning juice, for over 100 DAYS IN A ROW! I am incredibly proud of myself for sticking with something so completely that has done so much good for my body.

Things celery juice has helped (though I’m also following the rest of what @medicalmedium recommends, so can’t attribute 100% to the CJ):
-*All* SIBO symptoms are gone, every single one
-No bloating after meals unless higher fat dinner
-No random nausea
-Better morning energy
-No constipation
-So many healthy poops
-Heartburn completely gone (this might be my favorite!)
-No smelly gas
-Less dizziness upon standing from POTS
-Tingling gone from left fingers and feet
-Chronic shoulder pain has lessened
-Decreased hyperthyroid meds

Things I’m still hoping will heal over time:
-POTS entirely, I still get dizziness and a high heartrate when standing
-Chronic fatigue
-Adrenal fatigue
-Chronic shoulder pain
-Be completely off hyperthyroid meds
-Joint pain, especially hands
-Hand strength

Juicing has helped so much that I don’t even see it as a chore anymore. The time and energy of cleaning the juicer pays off every time I take a sip! If you’ve had any doubts of starting to drink celery juice, START NOW!

Raw, Vegan Breakfast Pudding

MAKES 6-8 SERVINGS

4 cups cashew milk (see recipe here: Cashew Milk)
1 banana (ripe works best)
1/2 cup raw flaked oats
1/2 cup chia seeds
3 cups fresh fruit (I used strawberries, blueberries and raspberries)
1 teaspoon vanilla (optional
pinch himalayan salt (optional)

1. Blend banana into cashew milk.
2. Stir in the remaining ingredients.
3. Ladle into jars, cover and place in refrigerator overnight. Alternatively, you can just put in a glass bowl, cover and refrigerate overnight. It will be ready to go in the morning!
