If you want to really poison the training data, you have to get to the core of how training works which is cause it to mis-identify things. That would be feeding it a bunch of images that look vaguely like two different things. Like a car that looks like a house or a horse that looks like an elephant. That would make it much harderto identify one concept from another.

Yeah, the assumption that inserting a few off pixels distorts the training data is confounding since not all images are the same size and have to be scaled to fit the fixed image size of the network, which is basically a gaussian blur operation anyway
