Bread:
2 1/2 cups flour, set aside 1/2 cup
2 1/1 tsp yeast
2 tsp sugar
2/3 cup warm water
1 tsp salt
2 Tbls oil
3 eggs
Mix yeast, sugar and water in bowl, set aside until frothy
Mix four and salt together, then add oil and egg, stir until lumpy, add frothy water-yeast mixture, fold together into a ball. Lightly flour surface for kneading, remove ball and knead gently, adding flour when sticky. Knead until dough is firm and smooth.
Let proof 90 min, then fold until a loaf, add to an oiled baking sheet. Bake at 375 until golden brown, roughly 28-30 minutes.
Chili:
1 lb ground beef
1 lb ground pork
1 can diced tomatoes
12oz chicken stock
1 white onion
1 shallot
3 Fresno chilis
8 cloves garlic
Dice onion, shallot, pepper and garlic. Slowly fry garlic in pan with oil and 1/4 cup stock, until fragrant, but not yet browning. Add onion, shallot and peppers, sautee until onions are translucent. Remove from pan and set aside.
Brown pork and beef in pan, adding a bit of chili powder to taste. Onde browned, add in onion mixture, tomatoes and remaining stock, bring to a boil. Adding seasonings (chili powder, paprika, garlic salt, onion powder, thyme, oregano and black pepper) and let simmer for 30 min. Combine 1 Tbls flour with 1/4 cup sugar, mixing well. Add into pan slowly after simmer is complete, stirring constantly. Zest 1/2 an orange into pan and stir. Simmer 10 minutes.
Serve over slices of the bread in a bowl.
