Don’t leave Argentina without spending a leisurely afternoon beside the warmth of a grill or open fire, feasting on copious grilled meats. Asado is both a gathering around a barbecue with friends and a method of grilling; a multi-step affair that often lasts several hours. Humitas is another one of the popular corn-based Chilean dishes you’ll find during your travels.
This traditional food is found throughout Latin America. You might know them as tamales, as they are called in Mexico.
Humitas are made with mashed corn and seasonings wrapped in fresh corn husks and steamed.
Each country has their own version. In Ecuador, they add cheese to the filling and eat them for breakfast. In Chile, onions, basil, and paprika are added to the hot corn filling, and they are eaten as an appetizer or main dish.

Dry-roasted corn kernels (cancha) sprinkled around add a pleasing crunch.
