No, the Ginger open source backend always will work and always gets the necessary updates as mentioned. Just not all of them (for example, no 2fa support in it).

You have to know, that whether the coordinator is open source or not doesn't mean much as nobody will guarantee you that that code will run on the server side (this is true both for Wasabi and Ginger). Aside from this, Ginger's coordinator is obviously not open source in the sense that some of the features the server provides are obviously missing or not fully available at the GitHub version (you can build a basic, working backend though).
This is why it is crucial that the client doesn't trust the server and checks as much as possible. The client is fully open source for both projects, you can replicate the compiled binaries.
Just close wasabi, open the config, check line "MainNetCoordinatorUri": and write the coordinator you want to join, then relaunch wasabi

I just upgraded to 2.3.0.0 and want to switch to https://coinjoin.kruw.io. What should I change in the config? Or just delete the config file?

I just did update to 2.3.0 version, but when turned on before update it prompted me to run wasabee.exe first

For Ginger, it's not a goal the users "to run a server for themselves", not like it isn't even trivial. For that there are lots of solutions, one of them is Wasabi (though feature wise the open source Ginger backend is the same).

You misunderstand why the code has to be open source then. It's meant for people that wants to run their own instance, excatly to don't have to trust on a specific version being run. Of course This still works for you because you didn't break change with the code you forked and added some stuff to so it still works, but without new cool features and potential optimization (who knows?), which is unfortunate
Regarding safety. Ginger client checks the remix, Wasabi doesn't need this as the fee support was removed altogether.
Ginger also supports 2fa and in this case is able to store your wallet encrypted on your client computer (so even if you're hacked, keylogged, your money is most likely safe). This is made so that the backend still doesn't know anything about you or your wallet (even the connection must be a Tor one).
It's a separate entity than Wasabi, we cannot vouch for them. What if I tell you today that they are safe (which I believe) and tomorrow they decide to try to scam you (which I'm sure they won't)? We do not control what they will do. Their client is open source so you can check it if you have time, it is 99% based on Wasabi. Their backend however is unfortunately not open source anymore.
