It's hard to explain, but it helps make it even harder to track which UTXOs belong to each other since there's extra randomness performed automatically by the client. But, you can use the "exclude coins" feature to prevent this from happening if you want to conserve fees.

It's a value set by the user so you can make sure you don't overpay. For example, if I suddenly changed the service fee on my coordinator to 1%, your client won't participate in those rounds since it costs more than you chose to pay.

The coordination fee % is charged by the coordinator for providing the service. I don't charge users to use my coordinator, so you can still participate even if you leave this fee limit at 0%.
