Yes, you can pause at any time during the Awaiting other participants phase (green glow), but you can't pause during the Coinjoin in progress phase (orange glow).

Yes, you could set this threshold to 0 and coinjoin will begin every time you receive a transaction or create change from sending no matter what your total balance is.

Yes, you can click the play button a second time to override the warning and coinjoin anyway. Or, you can reduce the "Stop Coinjoin Threshold" in your coinjoin settings from 0.01 to a different number,.

By default, if your balance is under 0.01 BTC then you get the "Coinjoin may be uneconomical" message. It prevents you from spending a relatively large amount of your total balance on coinjoin mining fees.
