One of the most famous vehicles for such purposes is the Tornado Intercept Vehicle (TIV), designed by Sean Casey. The TIV is a heavily modified Ford truck with steel plate armor and bulletproof windows, capable of withstanding high winds and even driving into tornadoes for filming and measuring.
In real life, such vehicles are equipped with sophisticated systems for protection and data collection, including hydraulic claws to anchor them to the ground and radar systems to study tornadoes. It's a far cry from the glamorous image we see in the movies, but they do perform important scientific work.
