India has transformed from a net importer of potatoes to a major global exporter of French fries, producing 60 million tonnes annually, second only to China, reports Finshots.
▪️This shift began with McCain Foods establishing its first processing plant in Gujarat in 2007, supplying McDonald’s and sparking a boom in the frozen potato industry.
▪️Companies like HyFun Foods and ChillFill Foods, supported by contract farming of specialized varieties like Santana and Frysona, have driven exports to ₹1,817 crores in FY25—a ninefold increase since FY20.
▪️Gujarat now produces 80% of India’s processed potatoes, with exports surpassing 20,000 tonnes in February 2025, challenging traditional exporters like Belgium and the Netherlands.
▪️The Central Potato Research Institute’s development of low-sugar, high-starch varieties and improved cold storage infrastructure have solidified India’s position as a competitive player in the $24 billion global French fry market.
